Red Honey: A Unique Coffee with an Artisanal Process
Red Honey is a coffee that features a blend of varieties, crafted through an extended fermentation process of 16 days, which equals 384 hours. This honey method not only highlights the coffee's characteristics but also helps reduce water usage, which is essential for sustainable production.
On the farm, a very artisanal production method is practiced, utilizing natural resources such as sunlight and the surrounding flora. The farm is home to 21,000 coffee trees, surrounded by guaduales, which are water-retaining plants. This contributes to a wetter soil and creates a cooler microclimate, minimizing water runoff during irrigation.
The guaduales, being excellent water retainers, attract a wide variety of seed-dispersing fauna, not just coffee seeds but also many other plant species. This phenomenon enriches the local ecosystem, promoting biodiversity and creating an environment full of life.
The artisanal process that characterizes the production of Red Honey means that sunlight significantly impacts the coffee's final notes. During the rainy season, much sweeter notes are obtained in fermentation, while during sunny periods, more liqueur-like and complex flavors can be found, resulting in a unique sensory experience.

Additionally, the farm promotes social inclusion, with the majority of our harvesters being elder individuals.
